ALEXANDERFONTEIN SAUVIGNON BLANC 2010

Rocket, fresh asparagus, Parmesan or pecorino shavings and olive oil is a perfect match with the Alexanderfontein Sauvingon Blanc. Make a delicious starter or side dish with these ingredients and you could even add more fresh ingredients like cucumber or a pink lady apple, sliced in thin wedges.

Recipe: Asparagus with rocket and Pecorino: Trim and rinse a packet of fresh asparagus. Place in a shallow bowl and cover with boiling water. Allow to stand for a few minutes or until just tender and rinse thoroughly in cold water. Drain well and arrange on a platter or individual plates with fresh rocket and Pecorino shavings. Season with black pepper and drizzle with a little extra virgin olive oil. Serve with a cold bottle of Alexanderfontein Sauvignon Blanc.

Sauvignon Blanc has developed to be the signature wine of the Darling district.  Being a cultivar that responds very favourably to a cool growing environment, it produces intense herbaceous and fruity aromas that are enjoyed by all wine consumers.

DESCRIPTION:  This wine displays intense asparagus flavours rounded off with passion fruit aromas.  Being delicate in style and structure, the lingering aftertaste entertains the palate long after the last sip.

STYLE:  Dry White Wine.

GRAPE VARIETIES:  100%  Sauvignon Blanc

VINIFICATION:  Grapes were handpicked at 23.5°B and harvested early morning.  The grapes were cooled down to 12°C. Settling occurred over a period of 24 hours at 12°C, before draining the juice by gravity. Fermentation was  between  12 – 14°C  with VIN 7.  Only free run juice used and one month lees contact after fermentation.  This  allowed for a clean juice which ferments well.
