ONDINE CHENIN BLANC 2009

Although this wine would marry well with almost any meal, a dish with chicken and fresh, fruity flavours is a good choice. Whether you make a salad with these ingredients or a light summer meal, the wine will complement the ingredients equally well. A salad with Danish feta, peaches, nectarines or grapes, a nut-and-seed sprinkle and a light honey-dressing could accompany roasted chicken as a full meal.

Recipe: Honey-chicken noodles with a fruit salsa: Mix equal quantities of olive oil, honey and Chenin Blanc and season with salt and pepper. Marinate chicken breast fillets in the dressing for about 30 minutes and pan-fry until golden brown on both sides. Reduce the heat, add the dressing and cover with a lid to simmer for 5-8 minutes, or until chicken is just cooked. Meanwhile cook your favourite Chinese noodles, drain and drizzle with olive oil. Make a fruit salsa, by finely chopping peaches, nectarines and apricots or grapes. Add chopped fresh Italian parsley and season with salt, pepper and lemon juice. Toss black sesame seeds into the pasta, slice the chicken and add with the pan juices to the noodles. Serve with a spoonful of salsa and Ondine Chenin Blanc.

Chenin Blanc is the grand old Dame of the South African wine industry.  Always playing second fiddle to the more popular cultivars.  We at Ormonde set out to produce an unwooded  Chenin Blanc  of the highest standards.  Fortunately our Chenin was planted  in ideal terroir, cool climate, high altitude with close proximity to the sea.

Description:  This is a generous wine  replete with fruit aromas especially guava, white peach and ripe apple.  Smooth   perfectly balanced with a voluptuous, lengthy and a rewarding after taste.

Varieties: 100% Chenin Blanc

Vinification:  Handpicked at 22.5˚B, the grapes were cooled down to 18˚C  before draining the juice.  The juice was settled for   48 hours or until the juice has a high clarity.  By cold   fermenting at  12˚C we strive  to achieve an elegant  style with mineral undertones on the palete. The wine  was then aged on the lees for three months before  bottling.  This creates a light , beautiful wine that one  would find enticing on the palate.
