ONDINE SAUVIGNON BLANC 2009

Serve this wine ice cold with a green fig preserve and ripe, creamy camembert as a snack or a light meal with warm Italian bread. A salad with rocket, hazelnuts, camembert and a drizzle of olive oil will be another good choice. Alternatively marinate chicken fillets in a little honey and white wine, pan-fry and serve on a bed of rocket and top with a spoonful of crème fraîche as a delicious light lunch. Be daring and serve the wine ice cold with dollops of crème fraîche, well drizzled with honey, a sprinkle of ground cinnamon and finely grated lemon rind – this could be a special snack with a few cheese straws before a meal or a dessert with a difference.

Sauvignon Blanc from the Darling appellation is very aromatic, due to part of the uniqueness and the location of the terroir.  We set out to produce a wine which offers more focus on the structure of the palate.  Although challenging this wine offers a new dimension of length and concentration of the palate.

Description:    This wine displays asparagus flavours rounded off with   undertones of grass and green fig aromas. Delicate in   style, the wine has both balance and complexity.  High levels of organic acid lead to a mineral mid-palate.  The balance of flavours and acidity, supports a savoury wine.

Varieties:    100%  Sauvignon Blanc

Vinification:    The grapes were harvested by hand early in the morning, at 23.5°B.  Cooled down to 12°C, upon arrival at the cellar the juice had fourteen hours of skin contact   before drawing off the juice.  Fermentation was  inoculated with Vin 13 which is a less aromatic yeast.
