Caramelised onions seasoned with cumin and/or thyme, served as an accompaniment with smoked pork or chicken are great flavour options with the Chardonnay. The wooded, sweetness marries well with a mild spicyness, so also try Stonehill Smoked olive tapenade or Stonehill Curry relish with cheese or savoury biscuits.

Recipe: Caramelised onions: Halve and thinly slice 3 large onions. Heat a little olive oil in a large frying pan and sauté the onions until soft. Add 60 ml soft brown sugar and 60-75 ml balsamic vinegar and simmer without the lid for 10-15 minutes. Add some fresh thyme and season with salt and freshly ground black pepper. Serve at room temperature with savoury biscuits of your choice and a glass of chilled Ormonde Chardonnay.
Tips: *Caramelised onions are very versatile and can be used on anything from hamburgers, to pizzas and sandwiches. Or serve it with chicken or pork fillet, in couscous, as part of a salad or an omelette. *Store in a sterilised jar and cover with a thin layer of olive oil. Refrigerate for up to 2 weeks. *For a different combination add 5-10 ml whole cumin seeds to the onions at the beginning and serve with Ormonde Chardonnay.
