




Serve this refreshing wine with roasted or pan-fried yellowtail on lemon and thyme couscous. The creamy flavours goes well with almost any meal, especially chicken, a salad or even a light meal with bread, salad and a selection of cheese. A creamy pasta with green vegetables like broccoli, beans or asparagus is also a good companion to the Proprietors Blend.
Recipe: Pan-fried yellowtail on lemon and thyme couscous. Place couscous in a large shallow bowl and pour an equal quantity of hot stock over. Allow to stand for 5 minutes. Fluff the couscous with a fork to separate all the grains and season with lemon juice, lemon rind, thyme and salt and freshly ground black pepper to taste. Meanwhile heat up a large frying pan and add a little oil. Season yellowtail portions with salt and freshly ground black pepper. Place in the pan, skin side first, and fry for about 4 minutes or until the skin is crisp and golden. Turn over and continue to fry until golden brown and the fish is just cooked or easy to flake with a fork. Squeeze a little extra lemon juice over the hot fish and serve with the couscous, lemon wedges and a chilled glass of Ormonde Proprietors Blend.

Grape Varieties: 65% Sauvignon Blanc, 30 % Semillon, 5% Chenin Blanc
Vinification: Sauvignon Blanc and Chenin Blanc grapes were handpicked at 24°B they were given extended skin contact before pressing took place. The Semillon was picked at 23°B All three cultivars were left on the lees for 6 months. The Sauvignon Blanc and Semillon was barrel fermented in first fill French oak barrels, there after this unique wine was blended.
