ORMONDE PROPRIETORS BLEND

Serve this refreshing wine with roasted or pan-fried yellowtail on lemon and thyme couscous. The creamy flavours goes well with almost any meal, especially chicken, a salad or even a light meal with bread, salad and a selection of cheese. A creamy pasta with green vegetables like broccoli, beans or asparagus is also a good companion to the Proprietors Blend.

Recipe: Pan-fried yellowtail on lemon and thyme couscous. Place couscous in a large shallow bowl and pour an equal quantity of hot stock over. Allow to stand for 5 minutes. Fluff the couscous with a fork to separate all the grains and season with lemon juice, lemon rind, thyme and salt and freshly ground black pepper to taste. Meanwhile heat up a large frying pan and add a little oil. Season yellowtail portions with salt and freshly ground black pepper. Place in the pan, skin side first, and fry for about 4 minutes or until the skin is crisp and golden. Turn over and continue to fry until golden brown and the fish is just cooked or easy to flake with a fork. Squeeze a little extra lemon juice over the hot fish and serve with the couscous, lemon wedges and a chilled glass of Ormonde Proprietors Blend.

Producing a blend with complexity, freshness and body with perfect balance is what we strive for in our Ormonde range. To achieve this requires focus and dedication throughout the whole year which accumulates when the wine is bottled as the Ormonde Proprietors Blend.

Description:  This blend of Sauvignon Blanc, Semillon and Chenin Blanc offer fresh citrus and tangerine aromas.  It has an earthly palate with a creaminess, asparagus and pithy undertone, thus retaining good acidity and freshness.

Style: Fruity Dry White Wine
